José Alfredo “El Chato” Barbosa began telling stories with words, and ended up telling them with fire and knives. He studied Communications, but discovered his favorite way to narrate was in the kitchen — observing, listening, and bringing stories to life through flavor.
He spent over a decade in Europe, cooking in London and Barcelona, mastering demanding techniques and embracing diverse cultures. Upon his return to Colombia, he set out to cook from who we are, with no disguises. He opened a restaurant in Bogotá that left its mark on the national dining scene, and later in Barranquilla, created a space that was kitchen, market, and gathering place. He also lent his touch to the formula of a local gin, knowing that a territory can be told as much in a glass as on a plate.
At deIndias, Chato cooks the way a chronicler writes: tuned into details, weaving memories into ingredients, blending what he has learned over a lifetime with what he breathes here. His cooking doesn’t aim to impress through artifice — it seeks to move with the truth.
